"One g" is a term used to compare the effect of an acceleration, or gravitation, with Earth's gravitation. On Earth, gravitation produces an acceleration of 9.8 m/sec2; so that amount of acceleration is 1 G; 2 x 9.8 meters per second square is 2 G, etc.

Meters per second square are the standard SI unit, so they are easier to deal with in formulae, but if you get a result in meter per second square, it is often converted to "G", to make it easier to visualize, especially in non-technical writing (like in science fiction).
