There are few different things in hookah that can make you light headed. The first is more than likely the large amount of nicotine you are intaking. One hour of hookah smoking is equivalent to 100 cigarettes. This much nicotine is typically the most likely thing that makes people light headed.
The second thing is the size of hits you are taking from the water pipe. If it is a large pipe you can feel light headed from this alone. Taking large breaths and lots of nicotine can easily make your head dizzy.
If you are using quick lighting coal or a non hookah specific coal (bbq pit coals) you could be light headed from the chemicals used in the coals. A very common coal is three kings quick lights and they do light very fast. The down side is lighting them emits a toxic fume. You should always wait till they turn white before using.
