Various irregular polygons have only one pair of parallel sides. Quadrilateral shapes specifically that meet this criterion are called trapezia (sing. trapezium, US spelling trapezoids/trapezoid). I do not know of any term for multilateral figures with exactly one pair of parallel sides.
