To make the numbers involved in the ratio smaller and therefore (possibly) easier to comprehend. It also keeps teachers, schools and examiners happy ;).

At the same time, we spend a lot of effort looking for similar fractions. Finding percentages, for example, are instances when we are moving away from reducing fractions. For addition and subtraction of fractions we need to look for similar fractions which, again, is a move in the opposite direction.
