They were separatist Puritans, revolted by the Popish pomp and Pagan elements of mainstream English Christianity, and although they were free to worship as they chose, first in England and then in Holland, they could not stand the sight of their neighbors having a merry Christmas.
The Pilgrims did pick their own religion, they chose to be Calvinists.
