A lemon is just a facilitator, and what really produces electricity is the copper and zinc molecules inside. Zinc becomes negative; It dissolves inside the lemon to make ions. Copper becomes positive. It collects positive (hydrogen ions from the acid) ions inside the lemon. Lastly, the lemon is acid. Acid can dissolve metals to make ions. Ions in turn can add or give off electrons, which contributes to the flow of electricity.

The acid in a lemon, citric acid, can be used in a simple experiment to create an electrochemical cell and provide some electricity. Push two wires or pieces of metal into the lemon. The wires or metal strips MUST be made of different metals. Typically try iron and copper, but you can experiment with different metals.

The acid in the lemon will form the electrolyte, which reacts with the metal electrodes. This makes a single cell and may only produce about 1 volt, with limited current capability.

Typically it can be proven to work, by powering up a small low current device, such as an LCD watch, or clock.
