It's conventional to call otherwise-unspecified axes x and y, so the co-ordinates are (x, y) pairs, but if the graph is of a definite set of data such as distance against time, you could use other letters.
You would have to make clear which axis is which though.
It's also important always to put the x first in co-ordinates.
Line Graphs: have lines connecting each graphed data. Line Plots: have Xs for each time the value is repeated.
