Not sure how they are stored it may vary in different systems and use a different number of bits (e.g. 32bits, 64bits). But the basic binary integer will be an octet, 8 bits, one byte, which can represent 256 different values, from 0 to 255.

Binary is used because of the way digital systems work, components in digital systems only recognize the presence or the absence of electrical current. So the presence of current will be 1 and the absence 0.

How it is stored in physical terms will also vary depending on the type of memory (i.e.- RAM, Hard drive, CD ROM...etc). In a common hard drive there will be a disc with a magnetic coating, this coating can be manipulated to change its magnetic polarity so it represents either 1 or 0 at any given location of the disc.
