If you mean how many one ounce servings would be equal to 1 gallon plus 1 quart, it would be 160 one ounce servings. There are 128 oz in a gallon, and 32 oz in a quart, so when you add them together, it is a total of 160 ounces. If you meant more than just 1 ounce per serving, just divide the number of servings into 160, and that will be your answer. For example, if you meant how many 6 ounce servings, you would divide 6 into 160, which would be 10 servings.
It depends on how big your serving is :) Assuming the beans are already cooked when you measured your quart, and a normal serving size is 1/2 cup, you'll have 8 servings to share. If your quart of beans are dry and then you cook them, you'll probably end up with 10 cups of cooked beans, or 20 half cup servings.

It appears that rival has discontinued the 16 quart size roaster oven. There are no replacement parts to be found for any roaster oven at the Rival website. And I have found any aftermarket supplier.

A serving of ice cream is around 1/2 cup. One quart has four cups, so one quart would have 8 servings. 5 quarts of ice cream would give you 40 servings.
There is no standardized measurement of a serving; you are free to serve any amount that you wish. Nonetheless, for a more or less typical serving size, I would make four servings out of a quart.
