The shape of the earth, after the unevenness of the mountains and valleys have been removed, is geoid. This, rather unhelpful term means earth-shaped. The geoid represent the shape that would be attained by the earth's oceans in the absence of tides and currents; and which is them extended onto the continents. It is the baseline which identifies the mean sea level.

A simpler term is an oblate sphere. These is a flattened sphere.

Simplifying even more, the earth may be referred to as a sphere.
