Weight doesn't tell you the volume. One pound of air, one pound of water, and one pound of gold all have vastly different volumes.

If a crown, supposedly of pure gold and weighing one pound, displaces MORE water than a pound of bar gold does, then the crown is LESS dense than gold and is therefore amalgamated with some less dense material.
