Why did they use 360 degrees and not something simpler like 100 degrees?

Probably because 360 can be divided in more ways than 100.
The number 360 has several more factors than 100. Consider:
360 = 5 * 3 * 3 * 2 * 2 * 2
This means that 360 can be divided by any combination of those factors multiplied together:
2, 3, 4, 5, 6, 8, 9, 10, 12, 15, 18, 20, 24, 30, 40, 45, 60, 90, 120, 180
That gives us twenty different factors by which we can divide the circle.
The number 100 on the other hand, only has four prime factors:
100 = 2 * 2 * 5 * 5
Which means it can only be divided by these factors:
2, 4, 5, 10, 20, 25, 50
Giving us only seven different factors.
