you use fractional distillation! basically, all the different substances in crude oil have different boiling points, and the column which is used to do fractional distillation has stages with different temperatures. when the substance reaches its boiling point temperature in the column, it turns into liquid and settles there, away from other fuels.

Oil is pumped out of the ground by first locating the oil and determining how far below the ground it is. A large drill is then used to drill to where the oil is and a rig is used to pump the oil out of the ground to be sent off to the refinery.
Unless you own a cargo ship and run it on crude oil - some operators do - it has to be separated into fractions before it's usable.
