It has more to do with the air conditions than the planes.

All planes give off exhaust from their engines. This contains carbon dioxide and monoxide, some nitrogen oxides and lots of water.

The water is emitted as a gas (steam) that under the right cold and humidity conditions condenses into tiny water droplets and these very quickly freeze into very fine ice.

These conditions are found more commonly in the upper atmosphere, so high flying planes tend to leave contrails (condensation trails)

Low flying planes emit the same exhaust, but in the warmer air at lower altitudes the water content does not turn to water and ice droplets - it remains as an invisible gas.
