I have a 2003 Sorento and hopefully for you it is the same. I assume you mean change the Centigrade temp reading to Fahrenheit? Here is the complete wording from the manual: If the battery has been discharged or disconnected, the temp mode will reset as Centigrade. This is normal condition and you can adjust the temp mode from centigrade to Fahrenheit as follows: Press the Temperature "Down button" 3 seconds or more with the "AMB" button held down. The display shows that THE UNIT OF TEMPERATURE IS ADJUSTED TO CENTIGRADE OR FAHRENHEIT. It works as I changed my battery and had the same problem.
Temperature display is standard on all models. Most probably, your temp sensor is faulty

Push and hold the Ambient (outside) Temperature button down while pressing the Temperature Down button. After several seconds the display will toggle. Tried it on my 2006 Sonata after finding this URL: http://en.allexperts.com/q/Hyundai-Repair-815/2001-XG300-Heater-Control.htm and it worked (after driving around for a month before I got weary of doing temp conversions in my head). The display was in Centigrade after a rebuilt engine was installed (don't drive through more than 4 inches of water in your Sonata, kids).

I had the heater controls from a 1998 Grand Prix out at one time and when I put them back in I plugged every harness that was there back in. It turns out that one of the harnesses only needs to get plugged in to show temperature in Celsius. I don't know if this will apply to a lesabre, but I thought I'd throw that out there.

A thermometer can be read with greater accuracy if limited to a smaller temperature range. So a medical thermometer with a range from 30o Centigrade (or Celsius) to 40o Centigrade, covering a range of only 10 degrees, will display the degree intervals as larger segments, which can be more accurately read and also fractionally subdivided. And since normal human body temperature is 36.8oC and core body temperatures outside the 30oC - 40oC range are almost never found in a living person, the 30o-40o range is sufficient.
