How did pyramid design change?

it changed the shape and size

What was the first attempt for a classic pyramid shape?

The first classic "smooth sided" pyramid shape was attempted by the Pharaoh Sneferu, who founded the 4th Dynasty of the Old Kingdom. Sneferu reigned from either 24-48 years, around 2600BCE, and during this time he was responsible for three separate pyramids. His first pyramid, the Medium Pyramid seems to be the first attempt at the classic pyramid. The Medium Pyramid is famous because it appears to have collapsed and was never finished. Sneferu's second attempt was the Bent Pyramid, which gets it name from the sharp angle its sides take about halfway up the sides. The third pyramid that Sneferu attempted is the Red Pyramid and is the first classical pyramid and was the tallest manmade structure in the world until Khufu's Great Pyramid at Giza was constructed.

How many men did it take to built a pyramid?

Depends on the size of the pyramid but it always involved thousands. The ancient Greek historian and traveller Herodotus (c.450BC) was told by his guide that it took 100,000 slaves to build the Great Pyramid of Pharaoh Khufu.

Why pyramids are so important?

If you're talking about the Pyramids built in ancient Egypt the size of the Pyramid represented the leader's (or in their case pharaoh's) importance.
