Why do government statistics always quote median home prices and average salaries and not the other way round?

I believe part of the reason may be that salary data are sourced from surveys and are therefore an estimate whereas house sales data are based on all sales.

This is known as the mean. The median salary is the "middle" value. That is to say, if you listed all the salaries from lowest to highest, the median would be right in the middle. Inferential statistics, is used to make claims about the populations that give rise to the data we collect. This requires that we go beyond the data available to us.
