I believe part of the reason may be that salary data are sourced from surveys and are therefore an estimate whereas house sales data are based on all sales.

What is inferential statistics?

Inferential statistics, is used to make claims about the populations that give rise to the data we collect. This requires that we go beyond the data available to us.
