Walt Disney World is really a multi-day destination. However, each park has busy and less busy days. The least busy days of the week are:
Probably Monday in the off season when there's no big holidays. OVOID Christmas and the Summertime at all costs! It's way to busy then! Avoid the Holidays if you can. When I went there for Holloween, it wasn't too bad. But that's because everyone was trick-or-treating ni California Adventure park while I was doing all the usually busy attractions in Disneyland.
I use to work for Disney World in Orlando and the weekends were always full with people, principally in the summer. If you can avoid going to Disney in the summer that will be your best bet. Take the kids out of school and go there in September, October, beginning of November if possible. Now, Epcot Center is beautiful and you will be able to have a lot of fun. Make sure to visit Mexico, the Netherlands, China...those were my favorite and my children favorite. In the summer doesn't matter much what day of the week you should go, but afternoons have been always slower than mornings and nights.
Everyday in Disney is crowded, there's really not a "good day" to go.
