Go to the Illustrator toolbox and select the line segment tool and draw the line (you can use the other tools to draw lines as well) and then if you wish to use the line as 'proper shape' or closed path in Illustrator then you can expand the line using the Object menu expand command. Best bet, add a decent stroke width or perhaps use width profiles with the line to get more interesting shape. You can also use width tool to drag out the 'width' of the stroke - this can also then be converted into a closed path (shape). If you mean shape as a 'Illustrator symbol' - simply drag the line over to the symbols palette to save it as Illustrator shape for future use.

You can connect a series of lines, but each line segment is considered a separate line entity. In a simple line which is connected by several line segment, each line segment is considered a separate line entity, each line segment can be editted seperately and doesn't effect other line segment. You can specify line properties, including color.line type. Use polyline objects instead of line objects if you want the segments to be connected as a single object.
