Yes, cows do have large nostrils. These large nostrils will allow more air into the lungs than smaller nostrils would.
Arabians have smaller dished heads and smaller noses than other breeds. They have larger nostrils than some breeds. They were bred for agility, like climbing and sometimes racing. The big nostrils allows them to get more air and the small frame, gain more speed.
A Shetland pony's nostrils are in proportion to its face, so although they have smaller nostrils than, say, a shire horse, nostrils on a Shetland pony do not usually look particularly small for that pony. I have two miniature Shetland ponies, and from memory I would say their nostrils are about 1-2 inches big.
