There is heaps of maths in horse riding.
For example in show jumping you use Pythagoras theorem to find the most effective take off point. To do this the angle must be 45 degrees, and the distance of take off should be the height of the fence. If you get what i mean.
In sporting you can do things like distance between posts, the degrees the horse bends to get around them and the distance to keep from the poles.
In racing you can do stuff about betting, area of the track, speed of the horse, average stride in between the posts of 100m.
There is sooo muc maths if you think about it. :)

they could use math by having their horse's race time and then by math figuring out what their horse's race time would be. Also, horses are measured in hands, which are measurements of 4inches. How tall a horse is determines if it's a horse or a pony, and there are different competition divisions for horses and ponies.

There are several things that humans can do that animals can't. One of those things are read. Humans can cook and animals can't. Humans can also drive.
The answer to page 3.16 in the punchline algebra book A is probably some boring math equation. And as for why cowboys have trouble with math, well, maybe they're too busy wrangling cattle or riding horses to give a damn about numbers. Just a wild guess.
