I don't think you can have it both ways unless you have no competition. To buy the set saves the customer about $3 on your particular pattern. If you are going to require that your china be purchased as a set, it makes no sense to price pieces individually. All retailers either sell their patterns priced as a set or as open stock. Individual pricing is part of an "open stock" concept where a customer is able to purchase only the specific pieces she wants. The risk in that is being left holding odds and ends of pieces that will be difficult to market. The only way selling by the piece might be more profitable is if the pattern is discontinued and people are looking for replacement items.

Bottom line - price it as a set.
