There are grooves in the set square where a pencil can be inserted to draw a line. There is also a hinge that allows for moving the two pieces of the set square to the proper angle before drawing.

Assuming the set square has angles of 30o 60o and 90o.... You can draw a right angle without any problem. That leaves 60 degrees left to draw so - place the 60 degree corner on the junction of the 90 degrees and draw another line. This gives you a total angle of 150.

"Zero latitude" is the line closest to the equator, because it's the definition of the equator itself. Once you leave the equator, there's no such thing as the "closest line". Any parallel of latitude you draw, no matter how close it is to the equator, I can always draw one that's closer. There's no 'official' set of lines. You can draw as few or as many lines as you want, wherever you want them.
