Many days, as each page would have to be written by hand. Several scribes would work on a book, each writing different pages. If the book was for the Church, several monks could take a year or more, due to the Old English writing in Latin and many gold leaf religious water-coloured pictures. The printing press brought books to the masses (provided they had the money).

If you spent 100 EVERY day... it would take more than 27 YEARS !
You could spend a fraction of a penny every second and spend a trillion dollars over a very long time. However to spend a trillion dollars in a certain amount of time it's $(1000000000 / Months * 2678400) per second. So over 5 months it would be about $76.67 per second.
The most formal kind of functional writing would be formal letters. This type of letter would be used in circumstances dealing with business matters or even when writing to a stranger.
Scribes essentially are known for writing. An example would be the monks who wrote the bible during the times prior to the Enlightenment.
An example of extensive writing would be writing a research paper or a thesis that requires in-depth analysis, research, and detailed exploration of a topic. This type of writing typically involves longer texts and extensive use of sources and evidence.
Plato feared that the invention of writing would cause people to rely on external written texts and stop exercising their memories, leading to forgetfulness and a degradation of knowledge.
Monks are any solemnly professed religious of a monastic Order like the Benedictines, Cistercians, etc. Monks would include both brothers and priests. Brothers are those monks who are not ordained to the priesthood. Other Orders with non-ordained members such as the Dominicans, Carmelites, Franciscans, etc. also have brothers.
Those would be monks.

A medieval scriptorium was the room, or building, usually part of a church or monastery where books and documents were copied by hand before the invention of a printing press or movable typeset. Usually an orator would read the book to be copied aloud and multiple writers would copy it. It was in these scriptoria that the most beautiful illuminated books were produced during the medieval period.
In English we would call them Tibetan monks. In Tibet they are called chodak or or choden.
Present day monks do use computers, faxes, scanners, etc. Prior to the late 1960s there were no computers to use. Some writing (manuscripts and similar) is done as an art form. This presupposes that it is done by hand with pens and brushes. SOme orders of monks require a withdrawal from the world. These orders might use computers for record keeping but would not use the Internet which would bring the world into their monasteries.
A Monastery is occupied by a community of Monks only
The monks' isolation prohibited them from helping others and spreading Buddhism.
