It depends on the dress pattern. Usually, the pattern includes an estimate of the amount of fabric needed for the size you're making on the back. It also depends on how much of the dress needs to be cut on a fold, how wide the fabric is, how the pieces need to be cut relative to the selvage... there's a lot of factors at play.
Now, for the most part, I rarely see complicated/long dresses that go beyond 5 yards of the main fabric, and many simple ones usually around 3. So a rough estimate might be to say you can make 2-3 dresses from 10 yards.
