The meaning of the question is not entirely clear. An octahedron can come to rest on any one of its eight faces and, in that context, it can roll in eight different ways. Prior to coming to a rest, the octahedron can go through one rotation or many rotations: the number of rotations depends on the force with which the octahedron is "rolled", and that is indeterminate.
