Science is about our understanding of things. We have hypotheses about the way in which something works. We use logic to work out the consequences of the theory and then design tests to check whether or not the consequences follow. If they do then there is greater evidence in support of the theory and if not, the theory needs amending or scrapping.

What distinguishes science from quackery are these logical tests, and the acceptance (sometimes reluctant) that existing theories are just plain wrong and new ones are required.
