The less than sign I believe that you are talking about is the minus/subtraction sign? The addition sign, +, is the opposite of the subtraction sign :)
The plus sign does adding and the minus sign does subtraction in Excel: =A10+B2 =A2-50 The * is used for multiplication. The / is used for division: =A2*A3 =A6/40

The addition symbol was first used in 1544 by Michael Stiple. I do not know when the subtraction sign was first used, I'm still trying to find that out myself!
