Strings aren't "supposed" to break. They break due to friction caused by repeated rubbing back and forth across each other. When impacted with the ball, the path of the swing causes the mains (verical strings) to shift their position on the crosses (horizontal strings). This "sawing" motion generally results in breaking the mains before the crosses.

How many independent generalised coordinates are needed to specify the simple pendulum moving in a vertical plane?

It's a 3-dimensional movement. (x, y) values will orientate the vertical plane of swing with respect to reference axes in the horizontal plane, then (z) will describe the vertical displacement, so 3 altogether: (x, y, z). Otherwise just the z co-ordinate, and you might describe the motion as strings of (0, 0, z) where z has real values, for the particular case.
