Because 37 degrees Celsius (human's body temperature 36.6 C) is an ideal temperature to grow human bacteria.

We do not want to encourage growth of human bacterias in lab experiments. If not controlled, could get out and contaminate surrounding environment. That's why we usually incubate at 25 C do develop different colonies to keep lab environment safe.
