A friendly letter has 5 parts: the heading (address and/or date), the greeting or salutation, the body, the closing, and the signature. You can also add a postscript, or P.S., at the bottom of the letter.

A letter has an address and date followed by the introduction. You then write the body of the letter explaining what you want them to know and then the conclusion. The letter is signed and the writer's name written under the signature if this is a business letter and a note at the bottom of the page if a cheque or other enclosure is included.

Dear Bill or Dear Mom is quite normal. But in these casual days maybe Hi Bill or Hi Mom would not seem out of place.
