In the late 1400s and into the 1500s, there were several kinds of popular music, which often involved the use of the Flute, the viol (an early violin) and the lute. Choral singing (like a glee club) was very well-received, and undoubtedly Copernicus would have heard some of it. A particular kind of secular vocal music was called a "madrigal," and it was sung without any instruments, using four to six voices to provide the harmonies.
