Get the elephant into a (large!) pool of water. You should be able to see how much the water on the side of the pool has gone up. By Archimedes Principle, the mass of the water displaced is the same as the mass of the elephant.

If you can completely submerge the elephant in the water, the measurement of how far the water has gone up will equal the volume of the elephant. This may be difficult, as elephants can swim but are not notably good skin divers.
