1 cup = 8 fluid ounces. So 16 fluid ounces = 2 cups. A simple volume problem, right.

But butter is normally sold by the pound. Well it normally won't work out this way, but it turns out that butter has density such that 1 ounce (mass) has a volume of 1 fluid ounce. So a pound (16 ounces mass or weight) of butter has a volume of 2 cups. This is from the packaging on the butter stick wrappers.
