It isn't 1+1 because the salt (some or all) will dissolve in the water. You cannot predict the volume. It needs to be measured experimentally, but the volume will certainly be less than 2 gallons.

1 gallon is about 3.78 liters. Also, every liter weighs 1 kilogram. So one gallon of water is 3.78 kilograms or 3,780 grams.

(35.89 g NaCl) / (100 g H2O) = (x g NaCl) / (3,780 g H2O)

x=1,356.642 g

1.356 kg of salt makes one gallon of water saturated.
