You can fit about 1.5 to 2lb venison in a quart jar for dry packing (raw, no added fluids) in a pressure canner, as long as you leave 1" head space. Cut uniform cubes around 1"/side or less for best results. Follow your canner manual to a tee. I have a batch in right now!
