Why are we taught determinants and multiplication of matrices in precalc when I can't think of any situation where this'd be useful?
The fact that you cannot think of any situation where these would be useful does not mean that such situations do not exist! Matrix multiplication is essential for solving systems of linear equations as well as for least squares regression. It is not practical to leave all of these to when you would be able to use them.
You learned to hold a pencil long before you knew how to spell. So what would you have written when you learned to hold a pencil?

Is statistics easier than precalc?
Statistics and precalculus both require skills in algebra. The difference between basic statistics and precalculus is that, precalculus is more of advanced algebra. Statistics on the other hand is more computational stuff. If you are talking about basic statistics, i think it is easier than precalculus. But remember, statistics is more involved as it gets higher since it requires calculus or real analysis kind of thing, so it is difficult.
