I would use a pictogram - take photographs every month and display them in sequence.
There are too many changes to display simultaneously and in numerical form. You can show the change in volume easily using a line graph. You could also show change in mass and mass of mouldy growth in numeric form but I suggest that pictures are more effective. The change in colour will be difficult to show graphically and, whatever you try, you will not be able to illustrate the stench!

A graph which consists of short straight lines which keep changing direction. Example : a graph line which is inclined at say, 30 degrees to a horizontal, then changes direction instantly to a line which is say, inclined at 60 degrees to the horizontal , etc. If the shape of a graph is not a series of straight lines joined to each other, then it is not a step graph.

Nothing particular. The graph of y = x2, for example, changes slope at each point on the graph.
Sure, on a bar graph, each bar represents a quantity of something. If the entire graph is for a certain product, then each bar could represent the quantity sold each month. Or the entire graph could be for a particular month, with each bar representing sales during that month, for different products.
