A restaurant owner would most likely find a use for algebra and should be able to solve systems of linear equations (which should be taught in either Algebra or early Algebra II). Pre-Calculus, Calculus, Geometry, and beyond will probably be useless.

Some highschools may offer special courses in hospitality. Also, you may be able to concurrently take some courses at the local community college. Take Math and bookkeeping if it's available. From the time we go to school all of us should be taught business economics and we'd be far more ahead of the game. High Schools don't offer much other than Math and Bookkeeping. Once you graduate that is the time you can either go to College or take night courses and get information from Financial Advisors at any banking institution. Many people can do this on their own if they want, and can take the courses they need. You need to know how to run the restaurant, how to treat staff, what salaries to pay, what deductions, the Health Rules and Regulations (because your restaurant will have Health Regulators coming to check to be sure you run a clean restaurant.) You need a good gimmick to attract customers, good food, pleasant staff, and you present to greet customers (if you are going on the higher end of the scale re restaurants.
