Nobody knows for sure. Theories run from it being the letters P and S (from "pesos") superimposed over each other, to it being scrolls wrapped around two pillars.
The $ symbol pre-dates the invention of the US dollar, so some of the more US-centric theories (that Thomas Jefferson, George Washington or other Founding Fathers created it from a doodle or their initials or parts of their names) are clearly wrong.
