A gradient of G% is equivalent to

arctan(G/100) degrees.

But be aware:

On calculators, arctan will be labelled tan-1 and may require another key (eg shift) to be used. In Excel the function is atan().

Calculators may give the answer in radians rather than degrees (depending on the settings), and Excel will give the answer in radians. To convert from radians to degrees, multiply the answer by 180/pi.
