It changes the sign of your answer between positive and negative. For example, if your calculator says 50 and you press the +/- button, it will change to -50. Press it again and it changes back to 50. It is useful if you need to multiply several numbers together and then subtract them from another number. For example say you multiplied some numbers on your calculator and got 52.932646 and you need to subtract that from 100. Instead of clearing the calculator and typing 100 - 52.932646, you could just press the +/- button to get -52.932646 and then add 100, and you will get the correct answer. It saves a step.
