This is going to depend upon the amount of fat in the item. If protien is found in muscle then it follows that there is more protein in fillet mignon than in rib-eye steaks. There would also be more protien in 95% fat-free ground beef than in 80% fat-free ground beet. When it comes to chicken, the same holds true. Those cuts of meat with less fat have more protein. Now comes the water part. Often grocery stores will sell poultry with "water added" with the idea that it keeps the meat moist while it cooks. That added water adds weight but does not add protien so you have less protein per pound when water is added to the meat. Also, almost all grocery stores sell beef and chicken with bone-in as well as boneless. Obviously you are not eating the bone so the weight you are buying is greater than the amount of edible material in the container. In the end it all depends on the amount of fat and water in the specimen. I would guess that 1 pound of beef jerky would have the most amount of protein but chicken jerky would be likely be just as equal.
