The standard height is around 12" to 15" the bottom of the box above the floor but for the disabled you can install them higher but no more than 48" above the floor. Pick a height that will work for the disabled and install all of them the exact same height.
You must have a switch to turn the disposal on and off. If you are asking how to connect because you do not have a switch. Install the switch under the sink just above the door opening. You can buy disposals that turn on and off when you place the lid over the hole. InSinkerator makes one.
The height is usually based on the type of mirror that is to be installed above the sink. Take the height of the sink plus the height of the mirror and add 6 inches to find the center for the placement of the fixture junction box. If there is to be a space between the sink and the mirror add that measurement in to factoring of the height.

Countertops are generally high enough to provide clearance for a dishwasher and other standard height appliances. The usual height is 36 inches above the floor. Use the final finished height of the floor (i.e. including tile) so that appliances will fit properly.
kitchen cabinets are usually 18 inches above the countertop and the range is usually 24 inches above the countertop changing your cabinet heights could please you-- but could also affect sales and purchase power of the property if or when you plan to sell. if you build taller base cabinets--the next owner will have to be as tall as you and your wife. any prospective buyers will look at the extra expense to downsize the cabinets and will seek a lower buying price when purchasing the property. The bathroom and the kitchen are the two most sought after focal points during the sale of a home-- any changes you make in these areas could affect persuasion during the sale of this property.

6 inches above the counter is good. Counters are 36 inches high, so 42 inches to the bottom of the box.
The bottom of side windows in mine (and most that I see) are 40" from the floor. The kitchen oversink window is 12 above countertop. -That all seems pretty normal to me. Possibly you have noticed Mobiles where owners have replaced windows themselves and lowered them.

If you are not of average height, put the center of the mirror at the height of your eyeballs. Be prepared to move it if you try to sell the house.
The standard height for a bathroom vanity is 30 inches. It is made 6 inches shorter than the standard kitchen countertop (normally 36 inches) in order to accommodate children.However a bathroom vanity can normally be made to specification, higher or lower depending on preference.

If there is a sink there and electrical power, I don't know why you couldn't. Mount the switch either above the doors in the face of the cabinet or right inside the door.
