It is hard to calculate the volume of any irregular shape. Approximations can be made by modeling a human as a series of connected cylinders, spheres, and ellipsoids of the appropriate dimensions. You coluld test the accuracy of your model by measuring the amount of fluid displaced when the human you modeled is completely immersed.
