You could use Archimedes Principal.

Fill a container (a bath, or tank) with enough water to cover the body, and measure the volume of water.

Then, get the person to lie down fully in the water, and measure the level of the water again and calculate the new volume as if the tank held only water..

The difference in volume between the two measurement is the volume of the person's body.

Another way to use the displacement method would be, if you can be sure to catch all the overflow, fill the cntainer to the top. get the person climb in and lie down and measure how much spills over the top... this works best if there is a spout at the side and you can fill the container up to the level of the spout.
